Fine Dining techniques for Today's Server (April 25, 2020).

Fine dining techniques are essential skills for servers in upscale restaurants – they are the many subtle things that Servers do to change an experience from average to memorable.  There are many unspoken etiquette standards that are expected both by employers and the clientele of high-end restaurants. Students are taught to create service magic by mastering practical fine dining techniques in this course.  This will include the use of language, the steps of formal service, how to talk about food and the rules of service etiquette.

The Psychology of Hotel & Restaurant Service (May 09, 2020)

Whether you are just starting out or have Hospitality experience, this course will change how you deliver service. Through understanding your own personality with True Colors personality dimensions you will also learn how to read the personality of those you are serving so that you can adapt your approach in ways that are imperceptible but extremely impactful.

This course goes beyond the hard skills of service to reveal how you can attune to your guests not just to enhance their experience but also to more easily prevent and resolve conflict. Former participants have also reported better working and personal relationships.

Instructor information:

Daniel Jordi is an experienced instructor of Hospitality Management at Vancouver Island University.  He has over 20 years of practical experience in the food and beverage industry.  Daniel has worked as the Food and Beverage Director at high end resorts, is a level two trained Sommelier, and a well-regarded Food and Beverage service consultant.  He has also completed a Commerce Degree from the University of British Columbia.
